Russian Style Spatchcock BBQ Chicken Recipe (pro shashlik - Noveau Russe Cuisine)
Spatchcock refers to the way the chicken is cut, which is shown in the video. CAN'T SEE THE INGREDIENTS OR DIRECTIONS? TURN ON ANNOTATIONS IN YouTube. Everything is shown in print during the video. In summer in Russia it is common practice to grill meats over charcoal at one's dacha (summer house -- which is a leftover from the Soviet era when every Russian was given two homes -- one in the city and one in the country with a garden area for summers). Russian men often pride themselves on grilling meats, just as American men are fond of barbecue in summer. Naturally as a chef, I have a reputation to uphold and I can't be outdone by some amateur Russian guy. So I created this recipe to blow anyone else out of the water. Sure it's cheating -- but it is AWESOME, as you will see! It worked so well that we turned it into a frequent weekend special during summers at the restaurant.

Learn how to make Chicken Stroganoff at home with our chef Nick Saraf only on Get Curried Stroganoff is also often made with strips of chicken breast and combined with rice. It taste amazingly delicious. So with Chef Nick Saraf learn to make Chicken Stroganoff only on Get Curried. Ingredients - Strips of chicken breast - Oil - few knobs of butter - 2 sliced onions - few sliced mushrooms - 1 tsp of sweet paprika - 1 tsp of mustard - 1 1/2 tsp of brandy - flour - chicken stock - salt - crushed black pepper - sour cream - chives - rice Method: - Cut the chicken into strips. - In a pan heat some oil and butter then add the chicken strips and cook it till its no longer pink and keep it aside in a bowl. - In a different pan add butter and let it melt, add sliced onion when half cooked add sliced mushrooms,when the mushrooms lets of the moisture add sweet paprika, mustard, brandy, flour - Add chicken stock, chicken strips, mix everything together then add salt & crushed black pepper - Add sour cream and mix it properly , some more chicken stock & cover it with the lid and cook on low flame for 10 minutes - Take it off the heat and add some chives and mix it. - Heat the pan on medium or high flame add the butter and let it melt, add chopped onion and cook it - Add rice and coat it with butter increase the flame & add chicken stock,salt and crushed black pepper & let it come to boil. - Cover it with lid and keep weight on top and reduce the flame and keep it for 11 minutes. - Add some butter and mix it through and add some chopped chives and mix it all properly Chicken Stroganoff is ready to be served! Meanwhile, Oscar checks out the manor house’s 19th-century kitchen and impressive stove. Though Tolstoy became a vegetarian later in life, in his younger days he loved to hunt and was keen on fine dining. Oscar and Glen enlist the help of a chief well versed in the cuisine prepared at Yasnaya Polyana to make two dishes that were wildly popular in the 19th-century. The first is forshmak, a veal and herring meatloaf that was served as a starter. To combine meat and fish in one dish seems rather strange today, and Glen can’t help but notice that the mixture looks and smells disgusting while being prepared. The second dish, baked apples, is a classic Russian dessert with a European twist that was once all the rage on the fine dining tables of the Russian gentry. The tangy fruit is stuffed with cognac-soaked sponge cake before being baked, with a lemon sauce drizzled over it fresh from the oven. The dessert is sure to please, but it remains to be seen if Glen’s palate will warm to the forshmak once it’s out of the oven. On finally reaching his destination, he meets the herd owner and socialises with some of the beasts, which despite the frightening antlers turn out to be friendly. He even takes a sleigh ride, before checking out what the women are doing in their chums – the large tepee-like homes of these nomadic tundra dwellers. The herder’s wife shows Oscar how to make a straightforward dish common to these indigenous people – by merely shaving a thin slice of raw frozen fish and chewing on it. Meanwhile, back in Moscow, Glen is undergoing knife training with an instructor, but his first attempt to fillet a fish yields far from stellar results. Before leaving Russia’s far north, Oscar dives into the world of tundra cuisine. We had arrived at the airport in Tashkent at about 4 am in the morning, and at 9 am we were ready to start eating our way through the city. First we met up with Bekruz and Akbar both from the Ministry of Tourism Uzbekistan (Bekruz is the one who invited me to Uzbekistan and arranged everything for us, so thank you Bekruz!), and Ravshan (check out his channel: https://www.youtube.com/channel/UClLf00Mg3N3g0Wo8_516tUA), a local food vlogger in Uzbekistan. Two of the most important phrases you should know in Uzbek are: Assalomu Alaykum - Hello / Greeting Rahmat - Thank you Bread Bazaar, Tashkent - We started this ultimate street food tour at the bread bazaar in Tashkent, a market dedicated fully to bread, with a little fruit and other things mixed in. We bought some break, some kaymak, and some fruit and then went to a nearby restaurant where they laid everything on the table for us, along with tea. Uzbek breakfast was a great way to get started. Chorsu Bazaar - The grandest bazaar in Tashkent is Chorus Bazaar, and it’s a perfect place to get a feel of Uzbek culture and food. We first stopped at the food court to try hanum, a type of dumpling filled with potato and somsa. Then we continued to the dome shaped iconic part of the bazaar, filled with fresh meat and spices. It’s one of the coolest market structures anywhere in the world. Plov Center - We kind of had to rush out of Chorsu Bazaar because although they prepare 1,500 Kilos, seriously, of rice plov per day, it only takes 2 - 3 hours before they run out everyday. So we got there, already one of the monster swimming pool pans was finished, but they still had a few others going and serving. Plov is the national dish of Uzbekistan, a food that’s eaten on every and all occasions. For Tashkent plov, it’s pretty heavy on the meat at oil, with rice, chickpeas, and raisins. Also it included, qazi - horsemeat sausage which is a delicacy. It was incredibly delicious, and proper meal experience. Total price - 100,000 UZS ($12.21) Plov is love, remember that when you’re in Uzbekistan. National Food Restaurant - After strolling around for a while in the afternoon, we continued to a National Food restaurant, a laid back family style restaurant that serves all things Uzbek food. Along with a number of dishes, the main dish I was most interested in was the naryn, thin slices of dough mixed with minced meat and horse. It was interesting, and quite good, as were the other dishes. Total price - 110,000 UZS ($13.43) Sultan Suleyman Restaurant - For dinner we went to a bit of a fancy trendy restaurant, and had another platter of food. This time, dough noodle like sheets topped with meat, horse sausage again, and green onions. We drove by this place many times, but tonight was the night that we finally gave it a try. And we are very happy we did. This place is authentic! We started our meal with green tea with cubed sugar and dried fruits. We also ordered a pitcher of Russian fruit punch which is called kompot. It is a delicious concoction made with apples, pears, and mixed berries. We ordered veal tongue, manti, dumplings, korea carrots, lamb, veal liver, chilean sea bass, samosa, and their homemade dessert!
