Sea bass in a salt crust - Italian recipe
Today we'll cook with Sonia the sea bass in a salt crust, a very simple and quick dish which keeps the flavor and the nutritional values of fish intact. *** Sometimes cooking fish may seem a challenge, but today I'll suggest you a simple recipe with a healthy and fat-free cooking method: the sea bass in a salt crust . Let's see together what ingredients we'll need: • over 6 cups (1 kg) of coarse salt • 3 ½ cups (1 kg) of table salt • 3 egg whites • 1 organic lemon • 1 clove of garlic • aromatic herbs, such as (bay, thyme, sage, rosemary, dill) • 1 sea bass of about 1,8 lbs (800 g) • extra virgin olive oil Let's make the sea bass in a salt crust: This is our sea bass, as you can see it's already gutted; so just wash it, then chop all the aromatic herbs and grate the zest of the organic lemon. In a small bowl, mix a spoonful of chopped aromatic herbs, the minced garlic and a teaspoon of lemon zest. With this mixture... fill the belly of the fish. In a large bowl, put the 3 whipped egg whites, add the remaining chopped aromatic herbs and the grated lemon zest, after that add the table salt and the coarse salt. The mixture for coating the fish is ready. If you think it's too dry, you can add 1 more egg white or a little water. Take a baking pan, line with parchment paper and make a bed of salt, about 6/10 inch (1 ½ cm) thick. Now take the sea bass, lay it on the bed and cover with the mixture. We're ready to bake our sea bass, completely coated with a salt and herb crust: we'll bake it at 390°F (200°C) for 40 minutes. 40 min. -- 390°F (200°C) After such time, take the sea bass out of the oven, let it rest for 5 minutes, then break the crust with a kitchen hammer. Our wonderful sea bass is ready! With this cooking method, we'll maintain and enhance the flavor of the sea bass, thanks to the protective crust of salt. Before tasting, you must remove the head, the skin, cut into halves and remove the central bone, then you can serve it with extra virgin olive oil, pepper or any dressing you like. Than all I want to do is heating up the oven to make something yummy. ButcherBox head chef, Yankel Polak, cooks a classy “Honey and Sea Salt Ranch Steak”, and shows us how it’s done. INGREDIENTS: ButcherBox’s 100% grass-fed, grass-finished Ranch steak, Raw Honey, Rainbow Carrots, thyme, garlic, Orange zest, Coarse Salt, Black Pepper, powdered coriander, olive oil. For the Meat: 1. Remove thawed ranch steaks from the packaging, and pat-dry thoroughly with a paper-towel. 2. Coat the steaks with Raw Honey and Coarse Salt by rubbing them all over the meat, and let them marinate for at least an hour. 3. Fire up the grill and place the marinated steaks on it. 4. Monitor the internal temperature of the meat with a thermometer. Notice as the temperature reaches 110F and is rising. We recommend 120-125F as the perfect medium rare temperature 5. Let the steaks rest for 5 minutes after taking them off the grill. Slice the meat against the grain for the best cuts. For the vegetables: 1. Chop the leafy stalks off the carrots. You can save them for later to be used in a salad or to make pesto out of. 2. Pre-heat oven to 350OF 3. Peel the carrots and keep them on an oven tray. 4. Mince some garlic, chop up the thyme, and grate the zest off an orange peel (be careful to only grate the outer peel). 5. Sprinkle them on the carrots, and add some raw honey over the carrots. What distinguishes one salt from another is texture, shape, and mineral content. These qualities can affect how a salt tastes as well as how it interacts with other foods. How Much Salt Is in That Teaspoon? Given its coarser crystal structure, kosher salt packs a lot less into each teaspoon when compared to table salt. In fact, even the volume measurements between the two major brands of kosher salt—Morton and Diamond Crystal—vary significantly. Here's how they measure up: 1 teaspoon table salt = 1 1/2 teaspoons Morton kosher salt = 2 teaspoons Diamond Crystal kosher salt TABLE SALT Table salt, also known as common salt, consists of tiny, uniformly shaped crystals created during rapid vacuum evaporation. It usually includes anti-caking agents that help it pour smoothly. HOW WE USE IT: Fine-grain table salt dissolves easily, making it our go-to for most applications, both sweet and savory. SHOPPING TIP: Avoid iodized salt, which can impart a subtle chemical flavor. Kosher Salt Coarse-grain kosher salt is raked during the evaporation process to yield flaky crystals originally used for koshering meat. Unlike table salt, kosher salt doesn’t contain any additives. HOW WE USE IT: Kosher salt is our top choice for seasoning meat. The large grains distribute easily and cling well to the meat’s surfaces. Check out his graphics reel below! https://vimeo.com/264720921 Sea Salt Caramel Brownies INGREDIENTS: 2 cups sugar 3/4 cup cocoa 1 cup canola oil 4 eggs 1/4 cup milk 1 1/2 cups flour 1 teaspoon salt 1 teaspoon baking powder 1 cup semisweet chocolate chips 14 oz caramels 1 can sweetened condensed milk (14 oz) 1 teaspoon sea salt INSTRUCTIONS: 1. Preheat oven to 350 degrees. Line a 9x13 inch pan with parchment paper 2. In a large bowl combine the flour, salt, and baking powder. In another large bowl, beat together the sugar, cocoa, oil, eggs and milk. Add the dry ingredients until blended. Fold in chocolate chips. 3. Spoon two thirds of the batter into the greased 9x13 inch pan. Bake for 12 minutes. 4. Meanwhile prepare the caramel filling. Melt over medium low heat in a saucepan stirring constantly until all caramel is melted. 5. Take brownies out of the oven and gently pour the melted caramel over the warm brownie layer. Sprinkle coarse sea salt on top. 6. Drop remaining brownie batter over the top of the caramel and carefully swirl the top with a knife avoiding the sides. 7. Bake for an additional 30-45 minutes or until toothpick inserted in center comes out clean. Do not overbake. 8. Allow the brownies to completely cool before cutting. Let cool in refrigerator or freezer for best results. Garnish the brownies lightly with additional sea salt.

Easy-to-make sea salt caramels Caramels made in the microwave? Director of Culinary Arts Marcus Cordova tells you how to make this happen and how to do it safely. We are back with another Cooking With Cordova episode and you will not be disappointed with the outcome. All you will need is a candy thermometer and the ingredients below. Is this your first visit to our Cooking With Cordova series? Follow along with our latest recipe that is a proven crowd-pleaser: Baked Candied Brie. A simple appetizer to prep your guests for the dessert to come. Watch for Cordova's secret tip on how you can heat a metal bowl in the microwave for this delicious caramel ending. Let's get started! INGREDIENTS: " Butter for greasing pan " 1 cup unsalted butter " 2 1/4 cups packed brown sugar " 1 cup light-color corn syrup " 1 14-ounce can sweetened condensed milk " 1/8 teaspoon salt " 1 teaspoon vanilla " 1-2 teaspoons flaky sea salt (Be sure to use crunchy coarse salt that doesn't melt into the candies) DIRECTIONS: 1. Line a 3-quart rectangular baking dish with foil, extending foil over edges. Butter the foil; set aside. 2. Place butter, brown sugar, corn syrup, condensed milk and 1/8 teaspoon salt in a large microwave-safe bowl. As long as this is a thick metal bowl, it is safe to place it in the microwave. Set microwave at 100% power (high) for 4 to 5 minutes or until butter is melted, stirring every minute. Microwave for 9 to 16 minutes more or until a candy thermometer inserted in center of mixture registers 245 degrees (firm-ball stage). (In a 1,000-watt microwave, begin checking temperature at 8 minutes; in an 850-watt microwave, start checking at 12 minutes.) NOTE: Thermometer tip: To get an accurate reading, gently swirl the thermometer through the mixture to stir it slightly, then hold it in the center. Do not leave the thermometer clipped to the bowl. 3. When candy reaches firm-ball stage, stir in vanilla. Pour into prepared dish. Sprinkle top of caramel mixture with sea salt. Refrigerate 2 to 3 hours or until firm. NOTE: To test for firm-ball stage: Shortly before reaching temperature, dribble a small spoonful of the hot mixture into a bowl of cold water. Using your fingers, form the mixture into a ball. Out of the water, it should hold its shape but will flatten quickly. If mixture is too soft, microwave for 1 minute more, and then retest using a clean spoon and fresh water. 4. To slice, use foil to lift caramel out of the dish. Cut caramel into 100 pieces with a buttered knife. 5. Wrap caramels in squares of waxed paper, twisting ends. 6. Store at room temperature for up to 2 weeks. VARIATION: They're delicious on their own, but they play well with flavor variations. When you stir in the vanilla, consider adding a teaspoon of orange zest or a half-cup of finely chopped walnuts, dried apple or pretzels. Did you enjoy this recipe? Would you like to see more?
